Welcome to InnOFoodLabs

Boosting Innovation in Organic Value Chains

InnOFoodLabs is a Horizon Europe project, bringing together farmers, businesses, researchers and citizens to boost organic value chains across Europe. Over the next four years, the project will pioneer new ways to strengthen the role of organic businesses in local economies.

By empowering farmers and small and medium-sized processors to access modern processing facilities, reach new markets, and claim a fair share of the added value, the project strengthens the foundations of sustainable, inclusive, and resilient European food systems.

The project will promote 23 innovations through 12 regional Living Labs in 9 countries.

These innovations will tackle:

Themes

Through these three themes, InnOFoodLabs brings innovation to every stage of the organic value chain — empowering local actors, connecting communities, and building a fairer, greener future for food in Europe.

Innovative small-scale food processing

InnOFoodLabs focuses on careful processing techniques, accommodating the seasonal character of primary production, and adapted to smaller batches. Our aim is to preserve the nutritional quality of organic food. We also promote sustainable and reusable packaging, to avoid the use of non-renewable and fossil-derived plastics.

Stronger Farmer–Processor Connections

We’re helping farmers and food processors work more closely together - especially with public kitchens and restaurants. This leads to better collaboration, more efficient food chains, and fresher, locally sourced organic meals.

New Ways to Deliver Organic Food

InnOFoodLabs is testing fresh ideas on how organic food reaches people. We’re exploring new ways of collaboration between consumers and local food chain operators, including better communication, marketing, and logistics. These innovations will make organic food more available, affordable, and accessible to more people in local communities.

A strong Community of Practice will complement the Living Labs

It will enable partners and stakeholders to share experiences and learn from each other across borders through:

National Meetings (in person & online)

The aim of national CoP meetings is to bring together actors from local organic food systems within the country to share experiences and contribute diverse perspectives to our collaborative learning process. National CoP working groups give the opportunity to gain insight into the work of national Living Lab and research partners.

Webinars

A total of nine webinars, rolled out in three annual cycles of three webinars each. Each webinar offers practical insights and hands-on inspiration for practitioners. Participation is free of charge.

Study Tours

The study tours to each Living Lab site enable in-person connections and inspire participants by showcasing the hosting Living Lab’s challenges and success stories. These Study tours mainly serve to make the concepts of Living Lab transparent in their local organic food systems and to exchange experiences on the innovations implemented. The study tours will take place in Spain, France, Germany, Denmark, Switzerland, France, Poland, Czech Republic, Slovenia.

Together we shape the future of local organic food systems in Europe

To ensure that our innovations are genuinely sustainable, we will evaluate their environmental and social impact using reliable tools and methods. We will also explore how stakeholders and consumers feel about these innovations and develop business models that meet the needs of our companies. Our goal is to scale up successful ideas so that they can be used in other regions and help build better food systems everywhere. InnOFoodLabs will translate its findings into practical policy recommendations to help improve the rules and support available for organic food systems.
